
Spicy Prawn Linguine Recipe

Ingredients
- 1 kg (2.2 lb) king prawns peeled
- 3 tbsp extra virgin olive oil
- 300 g (4.9 cups) linguine pasta
- 4 garlic cloves finely chopped
- 200 g (2 cups) sugar snap peas trimmed
- 2 red chilli deseeded and finely chopped
- 10 cherry tomatoes halved
- 1 tsp fresh basil
- 1 tsp lime zest
- 2 tsp sugar
- 1 tsp salt
- 1 tsp black pepper
Instructions
- Cook linguine pasta according to instructions and add sugar snap peas for the last minute.
- Heat olive oil in a wok/pan, cook garlic and chilli for 30 seconds.
- Add prawns and cook for 3 minutes.
- Add cherry tomatoes and cook for 3 minutes.
- Drain pasta and sugar snap peas, toss with prawn mixture.
- Stir in basil leaves, season with salt and pepper.
- Serve with mixed salad leaves and warm crusty bread with lime dressing.
