  • Cook chicken breast in a large wok with vegetable oil and soy sauce on high heat for around 5 minutes, or until chicken is browned.
  • Reduce heat to medium-high and add sesame oil, onion, peas and carrots and fry until tender.
  • Scramble eggs and mix with the vegetable mixture.
  • Add the rice and chicken to the mixture, pour soy sauce on top, stir and fry until heated through and combined.
  • Garnish with chopped green onions.

1. Use cold, cooked rice – ideally from the day before – to get the best texture and prevent sticking.
2. Cut the chicken into small, bite-sized pieces for easy cooking and even flavor distribution.
3. Use a wok or large frying pan with high sides to prevent the ingredients from spilling over while stir-frying.
4. Sauté the chicken first until cooked through and lightly browned before adding the vegetables and other seasonings.
5. Use fresh and colorful veggies, such as onions, green peas, carrots, and bell peppers, to add flavor, nutrients, and texture to your fried rice.
6. Consider adding some aromatics, such as ginger, garlic, and scallions, to infuse the dish with depth and fragrance.
7. Beat the eggs separately and add them to the pan in the last few minutes of frying the rice to ensure even cooking and distribution.
8. Use soy sauce, oyster sauce, or fish sauce for umami and saltiness, but use them sparingly to avoid overwhelming the other flavors.
9. Don’t forget the sesame oil and freshly ground black pepper for a delicious, nutty finish that ties the dish together.
10. Garnish with some fresh herbs, such as cilantro or parsley, for a pop of color and freshness, and serve hot with chopsticks or a fork.
