
Simple Chicken Fried Rice Recipe

Ingredients
- 1 lb (453.6 g) chicken breast cut into bite-sized pieces
- 1 tbsp vegetable oil
- 3 tbsp soy sauce
- 3 cups (480.8 g) cooked rice leftover
- 2 eggs beaten
- 2 tbsp sesame oil
- 1 onion finely chopped
- 1/2 cup (73.5 g) frozen peas thawed
- 1/2 cup (64.9 g) frozen carrots thawed
- 2 tbsp green onions garnish
Instructions
- Cook chicken breast in a large wok with vegetable oil and soy sauce on high heat for around 5 minutes, or until chicken is browned.
- Reduce heat to medium-high and add sesame oil, onion, peas and carrots and fry until tender.
- Scramble eggs and mix with the vegetable mixture.
- Add the rice and chicken to the mixture, pour soy sauce on top, stir and fry until heated through and combined.
- Garnish with chopped green onions.
Notes
1. Use cold, cooked rice – ideally from the day before – to get the best texture and prevent sticking.
2. Cut the chicken into small, bite-sized pieces for easy cooking and even flavor distribution.
3. Use a wok or large frying pan with high sides to prevent the ingredients from spilling over while stir-frying.
