Shrimp lettuce wraps is a quick and easy recipe made made with shrimp, bell pepper, tomatoes, and spring onion all wrapped in a romaine lettuce. This is also a great meal prep recipe because you can store the prawn filling for the week ahead and simply add to your lettuce wraps for a quick lunch or dinner.

  • Arrange lettuce leaves on a plate before you begin.
  • Season shrimps with salt and pepper.
  • Add olive oil to a large skillet over medium-high heat. Cook shrimp for 2 minutes per side. Set aside once it has cooked.
  • To the same skillet, lightly fry the spring onion and bell peppers until crisp.
  • Fill, add, and divide shrimp, bell pepper, spring onion, and chopped tomatoes between your romaine lettuce leaves.
  • Garnish with cilantro.

Notes

To meal prep, you can make the the shrimp filling and keep it stored in the fridge for up to 3 to 4 days.
