  • Rinse the chicken inside and out and pat it dry with paper towels.
  • In a small bowl, mix together the olive oil, lemon juice, minced garlic, dried thyme, dried rosemary, paprika, salt, and pepper.
  • Place the chicken in a roasting pan and rub the marinade all over the chicken, including inside the cavity.
  • Arrange the lemon quarters inside the chicken cavity.
  • Roast the chicken for 1 hour and 15 minutes or until the internal temperature reaches 165°F (74°C) when measured in the thickest part of the chicken.
  • Remove the chicken from the oven and let it rest for 10 minutes before carving and serving.
