
Quick Thai Prawn Curry Recipe

Ingredients
- 1 tbsp vegetable oil
- 1 onion chopped
- 1 tsp ginger peeled and grated
- 400 g (14.1 oz) prawns
- 2 tsp thai red curry paste
- 400 g (2.6 cups) chopped tomatoes
- 50 g (1.8 oz) coconut cream
- 1 tsp coriander chopped, to serve (optional)
Instructions
- Heat oil in a medium saucepan or wok.
- Add onion and ginger, cook until softened.
- Stir in curry paste, cook for 1 minute.
- Add tomatoes and coconut cream. Simmer for 5 to 10 minutes.
- Add prawns, and cook for 8 minutes.
- Serve with jasmine rice and garnish with coriander (optional).
