
Prawn and Chorizo Jambalaya Recipe

Ingredients
- 2 tbsp extra virgin olive oil
- 125 g (1.1 cups) chorizo diced
- 250 g (1 cups) king prawns
- 1 onion finely chopped
- 1 green bell pepper finely chopped
- 2 celery stalks finely chopped
- 5 garlic cloves minced
- 1 tbsp paprika
- 1 tbsp ground cumin
- 1 tsp red chilli flakes
- 2 tbsp fresh cilantro finely chopped
- 300 g (1.6 cups) white rice
- 8 cherry tomatoes quartered
- 1 litre vegetable stock
- 1 tsp salt
- 1 tsp black pepper
- 1 lemon garnish
Instructions
- Heat olive oil in a pan or casserole, fry chorizo for 5 minutes.
- Add onion, garlic, green pepper, and celery, cook for 8 minutes.
- Stir in paprika, cumin, chilli flakes, and thyme, cook for 1 minute.
- Add rice and toast for 5 minutes.
- Stir in cherry tomatoes and stock, bring to a simmer, and cook for 20 minutes.
- Stir in prawns and season.
- Serve with lemon wedges.
