Ingredients
- 1.5 cups (228.2 g) orzo pasta
- 1 pint (473.2 ml) cherry tomatoes halved
- 2 spring onions sliced
- 1/2 green bell pepper
- 1 cup (60.9 g) fresh parsley chopped
- 1/2 cup (23.8 g) fresh dill chopped
- 1/4 cup (34.2 g) kalamata olives
- 1/4 cup (39.1 g) sweet corn
- 3 tbsp feta cheese
Salad dressing:
- 1 lemon juice of
- ¼ cup (54.8 g) extra virgin olive oil
- 2 garlic clove minced
- 1 tsp dried oregano
Instructions
- Cook orzo pasta according to package instructions.
- In a large mixing bowl, combine tomatoes, spring onions, bell peppers, parsley, dill, olives and sweet corn.
- Add orzo pasta to the mixing bowl.
- In a seperate small bowl, mix lemon juice, lemon zest, olive oil, garlic, oregano, salt, and pepper.
- Pour over the orzo mixture and toss to coat.
- Add feta cheese and refrigerate before serving.
