
Mediterranean Bean Salad Recipe

Ingredients
Bean Salad:
- 240 g canned chickpeas drained and rinsed
- 240 g canned white beans drained and rinsed
- 1 small red onion chopped
- 60 g kalamata olives halved
- 1 red bell pepper chopped
- 100 g cherry tomatoes halved
- 1 cucumber diced
- 80 g feta cheese
- 1 tsp fresh mint chopped
- 1 tsp fresh parsley chopped
Salad dressing:
- 2 tbsp extra virgin olive oil
- 1 tbsp red wine vinegar
- 1 lemon juiced
- 2 garlic cloves minced
- 0.5 tsp salt
- 0.5 tsp black pepper
- 1 tsp dried oregano
Instructions
- To prepare, in a large salad bowl mix together all ingredients for the bean salad.
- In a mason jar or large bowl, add all the ingredients for the salad dressing and whisk for a few minutes.
- Drizzle the dressing over the salad and ensure it’s evenly coated before serving.

- Remove feta cheese if you want this recipe to be vegan-friendly.
