  • In a large saucepan (instant pot or crock pot), add olive oil over medium-high heat.
  • Add the onion, garlic, carrots, and celery. Cook for 5 to 8 minutes.
  • Add the chicken breast and cook for 5 minutes by continuously stirring.
  • Add the chicken broth, turmeric, ginger, thyme, salt, and black pepper.
  • Add in the pearl barley.
  • Cover and reduce heat to low. Simmer for 30 minutes.
  • Remove cover and stir. Allow to cool down and serve.
