
Grilled Jerk Chicken Recipe
Ingredients
- 2.8 lb (1.3 kg) chicken thighs bone in
- 1 tbsp vegetable oil
- 1 onion roughly chopped
- 3 spring onion chopped
- 2 scotch bonnet chiles chopped
- 3 garlic cloves chopped
- 1 tbsp five-spice powder
- 1 tbsp allspice berries grounded
- 1 tbsp ground black pepper
- 1 tsp dried thyme
- 1 tsp freshly grated nutmeg
- 1 tsp salt
- 1/2 cup (117.7 g) soy sauce
Instructions
- Combine onion, scallions, chiles, garlic, five-spice powder, allspice, pepper, thyme, nutmeg, and salt in a food processor.
- Blend until a coarse paste forms.
- While the machine is running, add soy sauce and oil in a slow stream.
- Put the marinade in a shallow dish and add chicken.
- Turn to coat.
- Cover and refrigerate overnight.
- Take chicken out of the fridge to reach room temperature.
- Heat the grill to medium-hot.
- Cook the chicken for 35 to 40 minutes, turning occasionally, until browned and fully cooked.
- Cover the grill to add smoky flavor.
- Transfer the chicken to a serving platter and enjoy!
