How to make homemade creamy tomato soup with plenty of tomatoes, vegetables, milk, and seasonings. Store leftovers in the fridge or freezer for your work lunch or dinner on a cold winter's night.

  • Heat the saucepan on medium-high heat.
  • Add olive oil, onion and garlic. Cook for 5 minutes.
  • Add the celery, carrots, potatoes and bay leaves. Cook for 15 mins.
  • Add the tomato purée, sugar, red whine vinegar, chopped tomatoes and passata, vegetable stock and water. Cover, reduce heat, and simmer for 20 minutes.
  • Remove bay leaves and purée the soup with a stick blender. Or allow to cool down and had to a high speed food processor and blitz.
  • Season, add cilantro, croutons, and serve.
