Creamy Tomato Soup Recipe
How to make homemade creamy tomato soup with plenty of tomatoes, vegetables, milk, and seasonings. Store leftovers in the fridge or freezer for your work lunch or dinner on a cold winter's night.

- 1 Hand Blender optional
Ingredients
- 3 tbsp extra virgin olive oil
- 2 onions finely chopped
- 2 garlic cloves chopped
- 2 celery sticks chopped
- 300 g (2.3 cups) carrot chopped
- 500 g (2.3 cups) potato diced
- 4 bay leaves
- 4 tbsp (4.1 tbsp) tomato purée
- 2 tbsp sugar
- 1 tsp salt
- 2 tbsp red wine vinegar optional
- 1 tbsp red chilli powder
- 1.6 kg (6.5 cups) cans chopped tomatoes
- 1 l (4.2 cups) water
- 500 g (2 cups) passata
- 4 vegetable stock cubes
- 400 ml (1.7 cups) milk
- 1 bunch cilantro
- 1 tbsp croutons to serve
Instructions
- Heat the saucepan on medium-high heat.
- Add olive oil, onion and garlic. Cook for 5 minutes.
- Add the celery, carrots, potatoes and bay leaves. Cook for 15 mins.
- Add the tomato purée, sugar, red whine vinegar, chopped tomatoes and passata, vegetable stock and water. Cover, reduce heat, and simmer for 20 minutes.
- Remove bay leaves and purée the soup with a stick blender. Or allow to cool down and had to a high speed food processor and blitz.
- Season, add cilantro, croutons, and serve.
