Black Bean Burrito Recipe
Ingredients
Black Beans
- 1 tsp extra virgin olive oil
- 3 garlic cloves chopped
- 2 tbsp ground cumin
- 1 tsp smoked paprika
- 800 g (4.6 cups) cans black beans drained and rinsed
- 400 g (1.6 cups) can chopped tomato
- 1 tbsp brown sugar
- 1 tbsp chipotle paste
Salsa and Guacamole
- 2 large chopped tomatoes
- 1 red onion finely chopped
- 1/2 bunch cilantro chopped
- 1 lime juice
- 2 avocado peeled and chopped
To Serve
- 6 tortilla wraps
- 300 g (1.6 cups) brown rice
- 1/2 bunch cilantro chopped
- 1 tbsp sweet corn
- 1 tbsp natural yogurt substitute if vegan
- 80 g (2.8 oz) cheddar cheese substitute if vegan
Instructions
- Cook the rice in a medium saucepan. Cover and allow to simmer for 20 mins.
- To a skillet on medium-high heat, add the olive oil, garlic, chipotle, ground cumin, brown sugar, and smoked paprika. Cook for 3-5 minutes.
- Add the black beans and tomatoes. Reduce heat and cook for 20 mins, or until the black bean sauce has thickened.
- Prepare the the salsa by combining and mixing the tomatoes, red onion, cilantro, and lime in a large salad bowl.
- Prepare the guacamole by combining and mixing the avocado, lime, and cilantro in a mixing bowl.
- Once everything is cooked, cooled down, and ready – assemble by wrapping up the cooked rice, black beans, salsa, guacamole, natural yogurt, cilantro and cheddar cheese.
- Toast the wrapped burrito on high heat in a skillet for 2 minutes each side.
